1st timer, setting up sump, having issues.....

I just set up my sump recently on my 125g as well. I had to put a check valve on the return pump because it was going up to the tank much faster than it was returning to the tank. Also I noticed that as soon as the filter bags in the sump get even a little gunky it slows the water to the sump pump and lowers water levels in the sump again, so the check valve really solved that problem for me. I do however still have the waterfall issue where it falls from the returns into the sump water as shown in the pic. Not sure how to stop that.

Hmmm let's see. From the picture you have two outputs into the filters how have you split them? What size is the drain tubing? This may cause a slow point on your drain side. Also on your write up a check valve is not meant to regulate flow. It's meant to stop reverse flow ie. water flowing back from the return side. If you wanted to regulate the flow of the return pump you need a valve on the discharge side.
 
Sock filter will always get cruddy quickly. You could try a different micron size or instead of using two small sock filter use one large one. Normally if a sock filter get to clogged up the water will just overflow until you can change it.
