Most butterfly's will do fine in a 75G, however, if you want coral, then the Copperband BF is the only one that is a safe bet with coral.

I agree the copperband is the safest in terms of corals, but they are one of the HARDEST to keep alive, so tread lightly.
 
I have a yellow tang and long nosed butterfly in my 90 mixed reef. The long nosed butterfly leaves corals alone, but will eat any worms it can find. Make sure whatever butterfly you're thinking about purchasing accepts frozen food. A simple step will greatly improve your odds of keeping a healthy & happy fish. In my experience, if you decide to add a tang, try to add it as your last fish as a way of reducing aggression (90 gallons is on the small size for recommended tank size). Lastly, I agree with MMreef/Mark's suggestion about a pyramid butterfly + they are pretty. Good luck!
 
I don't know if I would bother with the Chromis. Schools of 3 aren't really that interesting IMO. I recently picked up to Talbot's Damsels and they are the most interesting looking damsels I've ever seen.
 
I like your first list with the yellow tang, but have you considered the purple tang? My buddy has a 90 gallon reef with one and it has been doing very well. His has been growing pretty slowly and he's had it about 6 years now. It's a beautiful fish, but then again, most marine fish are!
